Menu Plan Monday (Night)

Apparently it defeats the purpose to post your menu plan at 6:35, when you’ve already eaten dinner on Monday, but whatever. At least I’m doing it. It really did help me last week. I actually *enjoyed* cooking this week. And how fun was it to have REAL leftovers to eat?! It’s sad when leftovers are fun and exciting. *sigh*

Let’s see, we begin kinda rough, but it gets better…

Monday: leftovers, eggs, fend for yourself, etc.

Tuesday: Annie’s Greek Tacos

Wednesday: Trader Joe’s Curry Simmer Sauce with Chicken & Jasmine Rice (I’m just going to pour the sauce and chicken in the crock pot)

Thursday: Venison French Dip Sandwiches (that was so yummy last week and we have a venison roast from Les’ bff, the Bambi-killer)

Friday: KT’s Enchiladas (This is a recipe from a friend on my messageboard. Everyone has tried them and just raves about them. Plus, it’s makes so much it’s easy to cook half and freeze half!)

Saturday: leftovers

Sunday: take out with Kdoggy Dogg after our n’hood Bible Study (what should we have, Kristen?)

I’ll probably also serve a salad and/or some veggies with all the “big” meals I’ll make.

    I love leftovers! Making meals and freezing half makes me feel so clever! Like I am really accomplishing something!

    I think some salads & veggies would be a good idea … you need to get those greens in for you & the little one:)

    fyi… I used pita (whole wheat) bread for the greek tacos rather than taco shells.

    I thought they were yummy and found the greek seasonings, it’s cavenders greek seasonings (or something like that)…

    I didn’t post a menu this week, we are having a week of prayer & fasting.

    I’ve always found that when you plan your menus you do have more leftovers! Unfortunately, this week I’m trying to eat some stuff that I’ve had in my freezer that the hubby & kids don’t actually like.

    I tried a salmon chowder last night which was awesome. My oldest child couldn’t even eat it. She just had a ton of tea biscuits. It’s so depressing when you make something nice and they won’t eat!

    Oh, well.

    More dessert for me.

    I’m ashamed of my menu this week.
    Monday – Voila Garlic Chicken (from the freezer)
    Tuesday – Frozen Ravioli
    Wednesday – Who knows?
    Thursday – Ummm, leftovers from Wednesday?
    Friday – Breakfast for dinner (we always have bfast for dinner on Fridays)
    Saturday – You find it you eat it
    Sunday – see Saturday

    I’ve thought that MPM would probably help me, too, but we’re so busy that any meals I plan just get thrown out the window. Company comes over, or we go over there….maybe I should still have an outline.

    My Menu for the week:
    Mon: Salad
    Tues: Soup and Salad
    Wed: Soup (with Salad)
    Thurs: Salad (Maybe some soup)
    Fri: Anything BUT pizza at Mealtime
    (Probably soup and salad)
    Sat: Maybe something mom makes?
    Sun: Fun food with YOU!

    I did the french dip sandwiches Friday night and they were AWESOME! Hubby was very impressed, and the little 1.5 pound roast made enough for 6 sandwiches so we had enough for some lunches the next couple days. I’m going to make the pizza from last week in the next few days. How was it…?

    This made me laugh because I haven’t been able to get my menus up and always wonder if I should add it Monday night or even later. Sometimes I feel like I should post last week’s menu!
