Anyone remember the fabulousness of my Rice Krispies Fruity Shortcakes? I know, you’ve probably been dreaming of them the last few months. Well, never fear, I have come up with a new CHRISTMASY version of Rice Krispies treats that you are going to LOVE.
See, Rice Krispies and The Motherhood contacted all the bloggers who had done those Springy treats (and some other seasonal challenges) to do a show-stopping Christmas treat. And although, I’m not super creative in the food department, I like a little show-stopping Christmasy challenge.
As I was thinking about this TWO things came to mind—first was this cute little craft Lydia and I were planning on making this year—it was a craft-foam gingerbread man inside a snowglobe. It’s something we found for 75% off after Christmas last year. I figured I could make some gingerbread men Rice Krispies and put them in a snowglobe!
But then something EVEN BETTER came to mind—my very favorite cookie from the Fickle Pickle! Anyone remember it? (Because I’ve blogged about it several times and just tweeted it last week!) OK, fine, you don’t know every single thing I love by heart–but if you’d ever had their CHOCOLATE GINGERBREAD COOKIE you’d never forget it!
So, that’s what we did. We made TWO batches of Rice Krispies Treats. One gingerbread and one CHOCOLATE gingerbread! Ready for the deliciousness?
Here’s what you need:
6 cups of Rice Krispies
1 bag of marshmallows
4 tablespoons of butter
1/2 teaspoon ginger
1/2 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoon nutmeg
1 teaspoon molasses
1/4 cup cocoa {optional for Chocolate Gingerbread}
Assorted frosting, candy, etc for decoration
The key here is mixing all your spices in with the butter. Once the butter is melted, just stir the spices in until your butter is nice and…spicy. Then add the marshmallows and coat. Then stir until melted. Keep it on low the whole time otherwise your treats will get crunchy. I don’t know why, but it’s true. Look how yummy that is:
After adding the Rice Krispies, I poured them into a baking dish and cut out gingerbread man shapes. A jelly roll pan might be a little easier for using cookie cutters because the treats would be thinner. If you were really crafty, you might be able to mold them into gingerbread people shapes, but I couldn’t figure it out. You saw my Rice Krispies Cannonballs, I could barely make circles!
Lydia loved the fruit-by-the-foot and the marshmallows (I cut them in thirds with scissors so the colored sugar would stick to it!). Asa just liked picking up the candy and eating it. Pretty sure he didn’t even decorate his gingerpeople.

Somehow only 2 of my gingerfolk escaped my stomach long enough to have their picture taken. And get their picture taken they did—inside a winter wonderland snowglobe! It’s just a big clear round bowl I found at Michael’s. I poured a little glitter in it and swirled it around. It made it sparkle and shimmer. Then I attached a cute snowflake ornament, added a little bit of that snowy cotton stuff and I think our little Ginger couple are as Christmas-y, wintery as can be!
I used cut mini-marshmallows and green sugar for the gingerbread person on the right. Along with some red fruit-by-the-foot-straps. The chocolate gingerbread guy on the right looks a littlThen I laid out the candy (in a muffin tin, my fave!) and let the kids have at it. e Santa Claus-ish with a fruit-by-the-foot tunic, edible pearl belt and green M&M buttons. Oh, and don’t forget his cut marshmallows with red sugar for shoes.
Even if you didn’t want to do gingerbread people and all the {amazing} decorations we did, you could still do the gingerbread or chocolate gingerbread flavoring. It was really easy, the flavor was light and not overwhelming. It’s just nice and Christmasy. In fact, I took the leftovers to church last Sunday (not a very pretty presentation, mind you, because I had just stuffed all of them in a ziploc bag) but everyone who tasted them loved them! (Am I right, ladies?)
I will be making these for Christmas this year. Seriously, they are yummy, Christmasy and simple to make! What? You’d like to make them, too? I keep it simple and just add peanut butter to my Rice Krispies. Occasionally, I’ll let the big girl add sprinkles to them to make them festive.
And btw, your little men are adorable. I’d eat them up! 🙂
People, I tasted both of these, and they were AWESOME! I was partial to the chocolate myself. I’ve been waiting (not so patiently either) for Amanda to post the recipe. I will be making the chocolate ones for sure. And, I might just roll them into little balls to serve.

My favorite thing we’ve ever done with Rice Krispie treats is making indoor snowmen with them last year when we were waiting for the real snow to come down.

I make rice krispies treats with butterscotch chips and add a layer of peanut butter-chocolate frosting with chocolate chips. They are amazing!!
HOW CUTE!!! I never would’ve thought about that!!! I will be trying this – no fancy shapes, I think. I don’t have the patience for it right now!
The fanciest I’ve gotten with Rice Krispy Treats is mixing m&ms into them!
This fall I thought I would be super creative and make rice krispie treats that looked like caramel apples. So I made my rice krispies and tried shaping them into balls (that was the first part of the failure that was this idea!). They were pretty warm so as they sat they just sort of turned into lumps instead of nice round balls. I had put lollipop sticks in them to but they didn’t really stick that well. Then I melted some chocolate to dip the rice krispie treat in (I did this part while my guests were at my house since I was running behind) and they wouldn’t coat very well, the sticks kept coming out, and the sprinkles I tried to add wouldn’t really stick but I was bound and determined to try! Since my friends were already over the treats didn’t really have enough time to set up so when it was time for desert I passed out lumpy rice krispie treats with sticks, covered in runny chocolate and sprinkles. While they looked absolutely ridiculous, they actually tasted quite good! (My 1 1/2 year old daughter LOVED them and got chocolate everywhere!)

I must admit…I’ve never done anything fancy with rice krispy treats beyond pressing some m&m’s into the top. I’m loving the idea of a gingerbread though. Such a cute idea!

We love rice crispy treats, and often use our cookie cutters to make “cookies” out of them. Mix in some mini m&m’s and drizzle some melted chocolate on them… oh yummy! Wasn’t planning on making any today, but now I may have to!

SO CUTE! I love gingerbread. I was thinking about having my students decorate Christmas cookies next week, but maybe I should do these instead.
I didn’t actually make it to the reception, but friends of ours had a rice crispy treat wedding cake.
For a Christmas party my husband and I held, we put “ornaments” on the tree of Rice Krispie Treat balls and a licorice ornament hook. One of the activities we had was having our friends decorate, and eat, the ornaments!
I was younger we’d die the treats green and shape them in to Christmas trees. They never really looked like Christmas trees, but they were really good!
Now I really want some Rice Krispies!

Alright, I’m in! 🙂 For Valentines Day a couple years ago, the kids and I made rice crispy treats for the class Valentines. Of course I used red food coloring with the marshmallows so the treats would be pink. Oh, and then we used heart shaped cookie cutters and put each treat in a cute Valentine cello bag. It was the best Valentine ever!
I’ve used Christmas tree cookie cutters to cut out Rice Krispy treats for my son’s class. We had a blast decorating them with frosting and sprinkles! The other moms “borrowed” my idea:)
Those are freaking adorable – and really, I clearly hang with the wrong crowd because I can’t think of something creative I’ve ever seen someone do with a Rice Krispy treat. My friends need to step up their game!
I love making rice crispies treats using the microwave to melt the butter and marshmallows. Does anyone have any input whether I could apply that method to this recipe? Also… how much marshmallows does this recipe need… I can’t find that.
And should I spray the cookie cutters with non-stick before or do the treats have enough butter in them to make that unecessary?

I have never thought to add flavoring to them!! I have added some at the end, as a coating, but never mixed it in – what was I thinking? Those are adorable.

I have gone my entire life without ever making Rice Krispy Treats, but I’d like to remedy that. I have a fond memory of some older girls at my childhood church making them for the kids they were baby-sitting. Love them!
A fun way I’ve seen rice krispies made is the colossal candy cane – it is easy to make, you just need butter, marshmallow and some red string licorice. Here’s the link to the recipe:

Until this year, all I’ve ever heard of or seen was the standard Rice Krispie Treats. This year, I am seeing creative ideas everywhere! I think I like the idea of covering them in dark chocolate the best.
A friend of mine made 3 dimensional snowmen and they were really cute.

I love rice krispy treats, though it’s been awhile since I’ve made any. Back in the day (pre-kids) I made them with candy corn and chocolate chips around Halloween. Actually it was a bit much, sometimes less is more–I think your gingerbread flavor might be just right. 🙂
Those things are absolutely adorable! The most creative thing I’ve done with Rice Krispie Treats is add mini M & M’s to them.

Rice Krispie treats were my daughter’s weakness. We even made a rice krispie treat cake one year with hershey’s syrup for icing and candles on top!
