The Magically Delicious Dip and A Cheeseball Recipe

Good morning, friends! I’ts 7:24 and I have been up for oh…2 hours and 15 minutes. My sweet Asa who has recently begun to sleep from 7pm to 7am decided that a waketime of 5:15am would be such fun. So he and I are eating breakfast as the sun comes up.

The other day, I mentioned my friend Jessie‘s Magically Delicious Corn Dip. Well, since Boomama is having a DIPtastic DIPalicious, DIPpendous party, I thought I’d share the recipe with you. First of all, Jessie from Vanderbilt Wife is a fabu cook and everything I’ve ever made from her blog makes me happy. Even the stuff I only read about makes me happy. Then again, most food does.

Anyway, here’s The Vanderbilt Wife’s Magically Delicious Corn Dip. (Yes, I made that title up.)

1 can yellow corn, drained
1 can white corn, drained (for some reason when I buy this it is pre-drained. weird.)
1 block of cream cheese
1 can of rotel (which is just tomatoes and spices. i like to get the lime one!)

Throw all into a mini crockpot. Let it melt and blend for an hour or two. Scoop up with tortilla chips and never stop until the crockpot is clean!!

How awesome is that?! Jessie, my family and friends are forever indebted to you because of this dip. Speaking of Jessie, she hosts a Family Recipe Friday. And since today just happens to be Friday, I thought I’d link up one of my family recipes (besides the new dip above). It’s another party type food and it is my FAVE.

I have an affection for all things cheese. I’ve posted before about the cheeseball from heaven (which is worth a click, I promise) and now I would like to share another cheeseball. Because CHEESE BALL sounds so appetizing.

1 block of velveeta cheese (i know. i know. it’s not remotely real food.)
1 block of cream cheese
1 block of sharp cheddar
pecan pieces

Grate and/or cut into pieces. Smoosh together with hands until uniform color. (<—-that is the best part) Form into ball, log or other interesting shape. Roll in pecans. Refrigerate until ready to serve with crackers (and/or summer sausage).

This makes two very large log-shaped cheeseballs. So you could probably cut down on the velveeta and make a smaller one. But seriously, why not make a huge one? You’ll eat it, I promise.

Well, I’m happy now. And wanting party food for breakfast! Happy Food-day to you!

ps–I seriously am making this dip tonight. We have friends coming over. I decided to do Mexican food just so I could serve this dip.

I just don’t know about this. Smoosh it together with my own two hands? I don’t know…it sounds…icky…

Then again, as a big dip fan and an even bigger cheese fan, who am I kidding?
