I want to do a menu plan this week. But I also don’t want to go grocery shopping. And really, I don’t want to cook. (Wow, am I sounding motivated or what?!) So, I was wondering if you’d help me. I’ve got a good base going on in my freezer. If I give you a few prompts will you give me some dinner suggestions? I’d love you forever!
Monday: Buffalo Chicken Fajitas {still left over from my last OAMC day…we packaged them incorrectly and now I’m thinkin’ instead of grilling it, I’m just going to dump it in the crock pot. whaddya say?}
Tuesday: 1 pound cooked grass-fed ground beef {i just made a shepherd’s pie last week. and tacos and spaghetti sound bor-ing.}
Wednesday: assorted fresh veggies that have been chopped and frozen (onions, poblano peppers, bell peppers, etc.)
Thursday: whole wheat hamburger buns {leftovers from my favorite sloppy joes ever!}
Friday: one frozen whole chicken {this kind of frightens me…}
Saturday: Becky is having a chocolate party this night. I know my fam still needs to eat dinner but it’s kinda hard to think about dinner when there is a chocolate party goin’ on.
Sunday: I do not cook on Sunday. Isn’t that breaking the sabbath or something?
I do have a few canned tomatoes, a couple things of pasta and a can or two of tuna. Not very exciting, huh? Please, feel free to leave a link to your blog, favorite recipe or your own menu plan for me to rip off try. for the whole chicken, two things
1- put it in the crock pot for 5-6 hours, more or less based on its size, cook until chicken falls off the bone, pull off bone, mix/shred with bbq sauce (if you cook it long enough it will fall apart easily and you don’t have to shred), and you got pulled bbq chicken for sandwiches, add cole slaw, beans, and mac n’cheese for a country kind of meal
or
2- soften up a block of cream cheese, when soften add 1 teaspoon of rosemary, stir, loosen up skin of chicken with spoon and put cream cheese mixture underneath the skin, when finished pour Italian salad dressing on top, cover with foil and bake 1.5 hours at 375, this recipe is sooo good, the chicken is tender and with cream cheese it is just so good, and i am not really a cream cheese fan, here’s where i got the recipe from and the potatoes are good too and I never remember the bacon and we still enjoy them http://www.kraftrecipes.com/recipes/rosemary-roasted-chicken-potatoes-107330.aspx

I made taco soup yesterday, and it was fantastic! It took about 15 minutes to put together, and then it just did its thing in the Crock-Pot all day. I’ll definitely make it again! It would use your ground beef.

I went to google reader this morning to get some ideas for my menu because I am so stuck! … and this was the first post in my preview window! 🙂 Unfortunately, I don’t have any good suggestions for your menu… but I’m going to try a new recipe for an Orzo and Spinach Salad, and you gave me the idea to do sloppy joes! Thanks! (sorry I’m not more helpful…)

If you have the time (it cooks for 5 hours in the oven), I highly recommend this Roasted Sticky Chicken recipe: http://littlebitthisnthat.blogspot.com/2010/03/roasted-sticky-chicken.html. It’s been around and all over the internet for years so I can’t take credit, but it is the best chicken recipe ever!
I’ve also done a whole chicken in the crockpot, pretty good.
How about a fritatta or quiche with the Wed. veggies? I like the fritatta better because it has no crust and uses potatoes. If I’m going to have carbs, I want the potatoes! I use this recipe as a base (http://www.5dollardinners.com/2009/12/ham-and-cheese-frittata.html), but you can adjust to add whatever you like.

Whether you roast or slow cook the chicken, make sure you utilize those bones and make homemade stock! It’s like reclaiming garbage and turning it into food, for almost free. 🙂
