I’m sitting at my kitchen table and I just ate a granola bar for breakfast. And my stomach is still growling. (Makes me feel bad for the kids who ate a Pop-Tart for breakfast and are sitting in school today. Just sayin’.) I usually make the kids pancakes or oatmeal in the mornings. Today, they ate up the last of the banana pancakes (YUM) and I was going to make an egg sandwich.
I’ve posted about scrambled eggs before (strangely enough) but I have not mentioned my new favorite way egg sandwich. Here’s what I do:
1. Melt some butter in a pan. (Yes, butter!)
2. Then I place a piece of prairie bread in the butter to coat it nicely.
3. Take out the bread and crack an egg in the pan. Sprinkle with pepper.
4. When the egg is fried, I scoop it up and put it on top of the bread. Then place it back in the pan to grill for about 30 seconds.
5. I take it out of the pan and fold it in half.
Couple this deliciousness with a glass of orange juice and you are in breakfast heaven!! Now, here’s the thing if you want this to be a dynamo. First: I just bought my first farm fresh eggs last week and HELLO DELICIOUS. The yolks are obviously bigger, the shells are different and it’s just straight up yummy.
The next thing is the Prairie Bread. I don’t know if this is the actual uniform name to this bread but it is DIVINE. I bought this loaf at Harry’s (Whole Foods) and I could literally eat it for every meal. In fact, I did eat it for breakfast AND dinner one night this week. It’s kind of dense…but also light. And full of seeds and…oh, I don’t know. If you have a Whole Foods near you rush right out and buy some Prairie Bread. You will never be the same.
Yesterday when I made my egg sandwich I saw some mold on my beloved prairie bread. I threw that piece away…and I’m still kicking myself for it. What’s a little mold?! So, today, this lonely granola bar Thursday, I am missing and loving my prairie bread.

Depending on how health conscious you are, you might kick it up a notch by adding any or all of the following: a slice or two of bacon or Canadian bacon, cheese, tomato. When we have homegrown tomatoes in the summer, I love putting a slice or two on a fried egg sandwich!
Have you ever made brown-sugar bacon? Oh, girlfriend! It is fabulicious.
Never tried grilling the sandwich. I just put mine on the bread straight out of the package. I like Pepperidge Farms Oatmeal or Sourdough loaves. Oh, and I add just a smidgen of Hellman’s on the bread.
We used to get fresh eggs for free when my hubster worked with a man who raised chickens. The difference in the quality of the eggs is amazing.

Just ONE favorite? π I love pancakes, but I also love scrambled eggs with cheese. And bacon is always nice. And I love breakfast burritos. I also like frozen waffles – or even better, homemade waffles.
Basically, I just enjoy breakfast. π
(Disclosure: However, I just ate my breakfast and it was, sadly, a package of little chocolate frosted donuts. Sad…)

I love breakfast foods — cream of wheat, french toast, dutch puff, waffles, pancakes, egg casserole, and on and on…
That’s not a very healthy list, though.

That bread sounds amazing. And I love your idea for egg sandwiches.
My current favorite breakfast food is Scottish Oatmeal. We just discovered it a few months ago, and it is fantastic (I even love cooking with it). I’m not sure if there is an equivalent ‘cut’ in the U.S.

I am a homemade bread maker but because we have been dieting for 6 months, on and off, I quit making it. I miss the smell of yeast and flour together.

Never heard of Prarie bread. But I love my homemade bread!! My absolute favorite breakfast food? Lucky Charms. Sad but true. But I don’t actually eat that anymore. These days it is more likely yogurt with homemade granola.

Mmm, that does sound like a yummy breakfast. I’m a sweet tooth though so my favorite is oatmeal banana nut muffins. You can make them with whole wheat flour so they’re even heartier and soo delicious!

Huh, Prairie Bread. I will have to check it out. I have often thought I could probably live on salad and a Really Good Bread.
I love to make scrambled eggs (yes with butter!) and put it on a biscuit with cheese. Sooo much better than the fast-food places.

I’ve never tried the Prairie Bread at Whole Foods…I’ll put in on my list. I like their Seeduction Bread–yum! I eat egg whites with spinach, a piece of toast and a slice of turkey bacon for breakfast.
